Let’s cook Japanese sushi which is called chirashi zushi-sushi for March 3rd, Girls festival Himamatsuri.

Today is March 3rd. In Japan Girl’s festival. I love ohinasama dolls. Hinamatsuri is one of big celebration for girls,especially baby girls. Parents , usually mother’s parents buy Ohinasama dolls to granddaughter. They display the dolls for March 3rd. On March 3rd parents and grandparents get together and celebrate and wish baby girl’s happiness and health, not like a party but family lunch or dinner.

Here is Ohinasama day special menu.Chirashi zushi, Hamaguri soup. Hamagiru is shell which indicate good marriage.

Chirashi zushi a kind of sushi but so many beautiful and cute sushi here.

There are many kinds of sushi. roll, edo nigiri, chirashi, temaki (self roll). You can create your own sushi with variety of ingredients. Every restaurant and home has their own recipi. When we make sushi, we cook rice and add vinegar and sugar and salt though some secret ingredient may differ. If you try to make good sushi, you should use good rice (sticky rice), soft water.  These two makes a big difference!

If you find Asian food store, you may find Sushi vinegar which ready made for sushi. It’s very convenient but when you can taste and don’t like its smell, you can add lemon. ( I do). The smell of vinegar is too strong for you, you can put it and boil it.

Rice (sticky rice): 450g   Water:540cc

If you have Sake:  a little (15cc) and dashi konnbu(sea weed for broth)

Rice Vinegar 60cc  Sugar (white) 40g  Salt 17g
